A one-day industry forum convening leading chefs, restaurateurs, and hospitality operators to discuss responsible growth, regulatory clarity, and the future of Bali’s evolving culinary ecosystem ahead of the launch of Sutala.
On 4 March 2026, Nuanu Creative City will convene Bali’s leading restaurateurs, chefs and hospitality operators for Nuanu Future Talks: Gastronomy Leaders, a one-day industry forum focused on how the island’s F&B sector grows responsibly and operates within clear legal and professional standards.
The forum is supported by Putra Surya Internusa, Chalista Mandiri Energy, PT Perusahaan Gas Negara (Persero) Tbk, PT Gagas Energi Indonesia, PT Hatten Bali Tbk, and RIEDEL The Wine Glass Company.
"Bali doesn't need another opinion about its food scene. It needs a room where the people actually doing the work can think/talk together. That's what we're building at Nuanu — a platform where different perspectives meet and create real momentum. Food was the most natural place to start Future Talks. As we prepare Sutala Market to become a gastronomy-led destination, we want the best of the world to come to Indonesia and the best of Indonesia to be represented there. So we're sitting down with the most talented people to make sure we get this one right." said Lev Kroll, CEO of Nuanu Creative City.
Bali’s restaurant landscape has evolved fast. International attention, new capital, and a wave of chef-led concepts have raised expectations across the island. With that momentum comes pressure, around compliance, sustainability, staffing, and long-term positioning. These are no longer side issues. They shape whether growth is stable or short-lived.
Nuanu Future Talks is structured as a working forum. The focus is practical: what it actually takes to build and run a hospitality business in Bali today, how to operate within regulatory frameworks, and how to raise standards across the board.
Speakers include Hans Christian (August); Syrco Bakker (Syrco Base); Chris Smith (7AM, Red Gun Powder, Woods); Wayan Kresna Yasa (HOME, Kaum at Potato Head); Elvira Wijsen (BTIC); Nic Vanderbeeken (Aperitif); Vinny Lauria (Osteria Della Terra); Dean Keddel (BRCA, Ginger Moon, Jackson Lily’s); Andrés Becerra (Santanera, Lennys Bali); Will Goldfarb (Room4Dessert); Pablo Fourcard (Milk & Madu, Banksia Hospitality); Emerson Manibo (Baro); Tim Stapleford (Ghost); Francesco Paco Angeloni (Amici, Samesa); Ayu Sudana (Bali Beans Coffee & Roastery); Sophie Digby (PT East West Palms; Co-Founder BTIC); Daniel Natali (Seniman Coffee); Terje Nilson (Seven Stones Indonesia, BTIC); alongside Alexandra Carlton, Max Brearley, Max Veenhuyzen, and other prominent Gastronomy Leaders.
The forum is backed by the Bali Tourism & Investment Chamber, Bali Restaurant & Cafe Association, and Bali HoreCa Club, reinforcing a shared commitment to legal clarity, responsible development, and higher operational standards within the sector.
Nuanu Future Talks also precedes the launch of Sutala, Nuanu’s upcoming gastronomy centre, positioning dialogue and alignment as a necessary step before expanding infrastructure.
